What is Manti?
40 to 60 centimeter pieces of yufka dough are cut into squares with a side length of 3 to 5 centimeters. A filling of minced lamb, onions, garlic, pine nuts and mint is placed on each of these pieces of dough (it is also popular with small, square-shaped potatoes - with salça and various spices); Then the edges of the dough are lifted from the sides and pressed together in the middle. A technique in which the square is folded into a triangle, whose two still open sides are then pressed together, is also known. The dumplings prepared in this way are cooked in salted water.
Mantı are served with a sauce made from yogurt, garlic and mint and with a second, warm sauce made from oil or butter with hot paprika powder. Peppers fried in oil are often served instead of the second sauce.
