What is Borek?
Borek is a Turkish version of a casserole or strudel made from yufka dough with a spicy filling of minced meat, feta cheese, spinach or other vegetables and parsley. Variants with different dough and/or preparation methods are very popular in the Balkans under various names. Depending on the filling, it is an everyday or festive meal and is also offered cold as a snack. Borek became known in Europe thanks to Turkish immigrants and is part of the standard offering in Turkish snack bars and bakeries.
