What is Lokum?
Lokum or Turkish Delight is a sweet based on a syrup made from gelled starch and sugar, often with mastic. It is soft and sticky, transparent yellowish or can also be different colors.
To make lokum, the syrup is boiled for several hours, then left to stand until solid; The mixture is cut into pieces and rolled in powdered sugar or desiccated coconut so that it no longer sticks to your fingers. Common additions to flavor the syrup include the juice of lemons, oranges and pomegranates as well as rose water or orange blossom water. Sometimes chopped nuts, almonds, pistachios or pureed apricots are also added.
