Sigara Böreks (cigarette burek) with cheese filling.
Sigara böreği (Turkish, roughly “cigarette” or “cigar strudel”) are finger-thick, filled and fried dough rolls from Turkish cuisine that are eaten as an appetizer or as a small snack.
To prepare it, brine cheese is first mixed with herbs and spices such as parsley, dill, mint and hot paprika powder. About 1 teaspoon of this filling is spread around the short end of the triangular yufka dough sheets. The dough is folded in on both sides and finally rolled up to create finger-thick, cigar-like rolls about 15 centimeters long. These are fried or baked in vegetable oil and served warm.
Sigara böreği are usually eaten out of hand.
